Ingredients
  

  • 1 banana
  • 75 g oats
  • 3 large eggs
  • 2 tbsp milk dairy, soya, oat or nut milks
  • 1 tbsp baking powder
  • pinch of cinnamon
  • 2 tbsp protein powder whey, pea or whatever your preference
  • coconut oil or a flavourless oil, for frying
  • Toppings: syrup fruits, or anything of your own choice

Instructions
 

  • Step 1: Blend the Batter
  • In a blender, combine a banana, oats, eggs, milk, baking powder, cinnamon, and protein powder.
  • Blend the mixture for 1-2 minutes until it turns smooth. Ensure that the oats are fully broken down; blend for an extra minute if needed.
  • Step 2: Cook the Pancakes
  • Heat a pan and add a small amount of oil.
  • Pour or ladle 2-3 portions of batter onto the pan, leaving some space between each for spreading.
  • Cook for 1-2 minutes until bubbles form on the surface and the underside becomes golden.
  • Flip the pancakes and cook the other side for an additional minute until fully cooked.
  • Transfer the cooked pancakes to a warmed oven to keep them warm.
  • Repeat the cooking process with the remaining batter.
